Born in Morocco to a family that raised chickens and fished for pleasure, Amine Laabi quickly came into contact with fresh produce, which he learned to cook. In Quebec, he enrolled in a cooking school and continued his apprenticeship with a chef from Lyon who taught him French techniques, before joining the kitchens of Italian and Portuguese chefs where he rose through the ranks of the restaurant industry. A gourmet chef as seen on TV (Les Chefs!), he nevertheless offers us a cookbook for everyday life. His cuisine is authentic and generous, just like him. Moroccan and Mediterranean dishes that combine wonderfully not only with harissa, chermoula, and candied garlic, but also, and why not!, with maple syrup. His personal anecdotes are as delicious as his creations, all put into words by the stylish pen of the author—and her great accomplice—Alexandra Diaz.
